A lot of recipes call for alcohol, most commonly white and red wine. The most important thing to remember when cooking with wine is to always use one of good quality that you would be happy drinking. If you wouldn't drink it, don't cook with it!
Prolonged cooking and cooking at high heats will burn off the alcohol content so the meal is suitable for all people. However, I would not recommend serving anything with a strong flavour of wine or other alcoholic beverages to children or recovering alcoholics.
