Recipes - Pineapple Salad

Refreshing, delicious and flavour packed!  Sounds like a bit of a crazy combination but it works beautifully.  You'll be surprised! 


Ingredients
1 x ripe pineapple, skin and core removed and cut into bite sized pieces
5 x springs mint, leaves removed and roughly chopped
1 x long red chili, seeds and pith removed and finely chopped
1/2 tbs brown sugar





Step 1 - Combine all ingredients in a bowl  
Step 2 - Cover and refrigerate for 1-4 hours
Step 3 - Serve on its own or with a good quality gourmet vanilla bean ice cream
