Hero Sushi - Tuggerah, NSW

I love sushi and could eat it every day so I was just stoked when Hero Sushi opened up their sushi train at Westfield Tuggerah.  I've been there a few times and have never been disappointed.  The food is always fresh, tastes great and looks amazing.  The staff are friendly and the pricing is reasonable.  There is also heaps of variety so there'll be something there to suit every set of taste buds.  Check out their facebook page for more info.

So it's simple, sit down at the bar, watch all the dishes go past and pull off whatever catches your eye.  When you're finished call one of the staff members over and they'll tally your plates and give you a ticket to take to the register.  Different plates come with different prices (see above photos) so you know how much you're spending and can get as much or as little as you want.  Here are a few photos showing some of the things I pulled off the train today, including salmon, soft shell crab, tempura vegetables, tempura prawns and avocado rolls.

Did you know?

It is never appropriate to stand your chopsticks upright in your rice while dining in a Japanese restaurant.  This customer is reserved for the deceased and is therefore seen as being very disrespectful.

Sushi Choo - Sydney NSW

I love sushi and it is a staple of my diet.  I especially love sushi trains as you can have a little taste of a lot of different things and variety is always good.

Sushi Choo may just be the best sushi I have ever had.  Fresh, fast and HEAPS of variety.  Located on the ground floor of the Merivale on George St, Sushi Choo is a funky little eatery with astro boy figurines, bright paper place mats and large, low hanging red cage-like light fixtures.

The food itself is pretty amazing, slices of fresh tuna that melt in your mouth, tender calamari rings in a crispy fried coating, chicken dumplings packed full of flavour, little bowls of noodles and inside out rolls as far as the eye can see in more varieties than you can count on both fingers and toes.

The staff are so friendly and appear to be having a lot of fun, which always makes a dining experience more enjoyable.  I recommend ariving early and taking advantage of their all-you-can-eat special, details can be found on their webpage.

Sorry for the lack of photos, you'll just have to go and see for yourself!

Recipes - Sushi

Sushi.

Ingredients
2 cups arborio rice
1/4 cup rice vinegar
2 tbs sugar
1tsp salt
1/2 tsp soy sauce, plus extra to serve
fresh salmon fillet approx. 250-300g
1 pkt nori sheets
1 cucumber, cut into thin strips
1 avocado, peeled and cut into thin slices
wasabi, plus extra to serve
pickled ginger, to serve

Step 1 - To make sushi vinegar place rice vinegar, sugar, salt and soy sauce in a small saucepan and stir over low heat until sugar and salt have dissolved. Set aside.
Step 2 - Cook rice. Spread cooked rice in a baking dish and pour sushi vinegar over rice.  Use a spatula to fold together, spread into a single layer and leave to cool.
Step 3 - Remove bones and skin from salmon and cut into thin strips.
Step 4 - Place a nori sheet, shiny side down, on a board or bamboo mat.  Spread a thin layer of rice over nori, leaving a 1/2cm at top.  Spread a very thin layer of wasabi about 1.5cm from the bottom and layer salmon, avocado and cucumber. Roll firmly.
Step 5 - Repeat until you have used all the rice.  Rolls can be cut in half or into 1cm rounds.
Step 6 - Serve with soy sauce, wasabi and pickled ginger.

Notes:

For a variation, cut a chicken breast into strips and marinade in teriyaki sauce.  Cook in a grill pan and allow to cool before making sushi.

As the rice is sticky, make extra sushi vinegar and use it to dip your fingers into before working with the rice.

This recipe makes about six rolls.
